Your patient is married and has two children living at home and has either diabetes or celiac disease. You are to create one meal plan for each of the following scenarios; a typical day to include three meals and two snacks, one special holiday meal and one meal from a local restaurant.
Describe the type of diet the patient needs to follow to maintain his or her health and what some of the restrictions are. Included in this will be your thoughts about what some of the challenges are to maintaining this diet while having to provide meals for the whole family, while dining out and while celebrating a holiday at a family member’s home.
In the next paragraph, describe what feelings this patient might have as it relates to their disease and to their food plan. What are some of the challenges related to finances, availability of appropriate foods, etc.? What are some of the long term challenges? Who might this person turn to for support?
